The bitterness felt on the tongue and the pungency felt in the throat are positive attributes and indicators of the oil’s quality criteria. The products have high intensity of fruity aromas (Grass, green apple, artichoke, almond, green banana, flower) and represent a well-balanced extra virgin olive oil.
